Scoppolato di Pedona is considered by many experts in the sector to be the best cheese produced in Versilia and one of the best sheep's milk cheeses in Tuscany.

This product of the Camaiore tradition tells a story whose origins fade into legend and whose epilogue is the happy and fortuitous finding of the original recipe.

Scoppolato represents an humble cheese that has become noble thanks to careful restoration work. It has the typical austerity of sheep cheeses, forged by six long months of aging in a cave, but also inherits the cool whiteness of the late summer breeze that blows over the hills of Camaiore.

The excellence of Pedona does not accept compromises and has also conquered the patrons of this small village, once forgotten and now a destination for numerous hunters of authentic tastes.

In Scoppolato you will find only what you expect, in compliance with the strictest dictates of tradition: pasteurized sheep's milk, salt, rennet, selected lactic ferments, linseed oil, grape seed oil. The curd is double, according to the original recipe

Its personality makes it ideal both alone and accompanied by the sweet taste of honey or jam, always strictly in the form of flakes. The uses in the kitchen can be the most varied: in fillings or on pasta it does not lose its fresh and timeless taste.
