Pecorino Tuada is a sheep's milk cheese from Alta Garfagnana (Lucca) that is handcrafted in the Pieve Fosciana area.

It is a product of the Tuscan-Emilian Apennines, its slopes, its narrow spaces and low temperatures: in this environment the sheep represent the “necessity-virtue” of the shepherds. 

Tuada is both tradition and innovation. The sensory experience begins with the strong taste of the sheep, then it softens and envelops the palate with the whole repertoire of flavors available: walnut, wood, pressed grass and finally - ace in the hole - the spicy, which invites the lucky taster to reach for the next slice.

Recommended Combinations

The natural habitat of Pecorino Tuada lies on a cutting board, alongside the most diverse cured meats, vegetable sauces and mustards. It is not uncommon to find it on pasta or as a filling for ravioli.
