Lardo Steso di Gombitelli is a cured meat that is produced in Camaiore. It has certain characteristics that distinguish it and put it in competition with the lard from nearby Colonnata (Carrara).
The comparison does not exist for the simple fact that the Lardo Steso of Gombitelli is different from the Carrara colleague.
This is a thicker cured meat, which takes on the rosy tones of a sunset at its conclusion. It also stands out thanks to the lean grain that runs through it and the long maturation that marks it.
To produce this little masterpiece, meats from the lumbar area of the pork are chosen, including their lean part.
Then a bath composed of salt, rosemary, garlic, pepper and nutmeg; after twenty days a dip in the brine, from which the lard will re-emerge after 10 months.
The result is a cured meat that melts in the mouth, in a semi-solid state, in which both spicy and sweet flavors can be distinguished and appreciated.
In the kitchen it is a cured meat with thousands of applications, starting with the possibility of tasting it alone on a slice of hot bread.
