Cantucci are dry almond biscuits, typical products of the Tuscan tradition. Since 2015 they have also enjoyed the IGP recognition, which has elevated their status internationally.

The modern recipe of the cantuccio is the prerogative of Antonio Mattei, a pastry chef from Prato who in the mid-1800s standardized the various versions produced up to that moment.

Flour, sugar, eggs, almonds (not toasted and not skinned) and butter: a few simple ingredients for a biscuit with a typical shape and a crunchy taste.

The elongated contours of the corner are obtained by diagonally cutting the hot dough just after cooking.

Recommended Combinations

Cantuccio and Vin Santo are an almost inseparable union. The crunchiness of the biscuit goes wonderfully with the liquid sweetness of the fortified wine. They can also be tasted alone, appreciating their genuineness.
