Cultivation of traditional peasant cereals that have been selected for their nutritional value. Organic farming together with the use of a stone mill makes the flour rich in many more beneficial properties. Compared to a common wheat (Triticum vulgare), it contains 20 to 40% more protein, and higher percentages of amino acids, vitamins and minerals including a high content of selenium: a mineral with antioxidant properties. Added to the advantage of being highly digestible, it also represents an excellent alternative for many people intolerant to common wheat.

This flour can be used both as a soft wheat and as a durum wheat to make: bread, mashed, pizzas, cakes or biscuits. It is TYPE 2 therefore with a higher fiber content.
