Tagliatelle are a very ancient type of pasta. They would even descend from the Roman era laganae, to which they are very similar. Also in Greek and Etruscan kitchens there was a similar dish, probably related to actual lasagna.

The pasta is made with top quality Italian durum wheat semolina and fresh Italian free-range eggs, all mixed in a special mixer at room temperature.

Once the necessary characteristics have been achieved, it is passed inside the kneading machine which presses the dough until it reaches the right consistency in order to pass to the dough sheeter.

Each step of the dough sheeter is performed manually with 12-14 repetitions and the thickness of each sheet changes according to the type of pasta.

The thickness of each sheet is also measured manually as it used to be. The drying also takes place at room temperature for a very long time about 48 hours and left to rest.

The manufacturing process guarantees the preservation of egg proteins and semolina carbohydrates to maintain elasticity, porosity and flavor at the highest levels.

Recommended Combinations

Caponi egg noodles can be combined with any type of sauce, following the primary taste of each tradition.
