Gluten-free macaroni are made from corn (70%) and rice (30%) flour, all mixed in a special mixer at room temperature.

When it has reached the necessary characteristics, it is passed into a machine called kneading machine which presses the dough until it reaches the right consistency.

Once the desired cut has been formed, the product is taken to the dryers. The drying also takes place at room temperature for a very long time about 48 hours.

The production of pasta, from the dough to the packaging, is meticulously followed by women who for years, step by step and manually, take care of every detail to give these products that extra feature. A craftsmanship made almost entirely by hand.

Furthermore, the pasta, being a laminate processed at room temperature, does not undergo thermal variations during its processing cycle. This allows not to alter the organoleptic qualities of the raw materials.
