GRAPES
Vermentino 85%, Fiano 15%.
VINIFICATION
The grapes from the individual plots cultivated in Vermentino and Fiano di Avellino are manually harvested and vinified. The vinification process begins with a cryomaceration for about 3/6 hours, followed by a fermentation in steel with the addition of selected yeasts at a controlled temperature of 16 ° C.
VINIFICATION
In steel on the noble lees for 3/4 months. In bottle for 2 months.
